- 2 celery ribs, cut into 1-inch pieces
- 1 boneless beef chuck roast (3 pounds), cut into 2-inch pieces
- 1/2 cup all-purpose flour
- 1-3/4 teaspoons salt
- 3/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 can (6 ounces) tomato paste
- 2 garlic cloves, minced
- 1 bottle (12 ounces) Guinness stout or beef broth
- 1 can (14-1/2 ounces) beef broth
- 2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
- Minced fresh parsley
Instructions
- Location the very first 5 active ingredients in a 5- or 6-qt. sluggish cooker.
- Toss beef with flour, salt and pepper. In a big frying pan, heat oil over medium-high heat. Brown beef in batches. Transfer beef to slow cooker with a slotted spoon. Lower heat to medium. To exact same frying pan, include tomato paste and garlic. Prepare and stir 1 minute.
